  12. 0 1/20 ts Baking powder

  13. 2.00 c Coarsely grated, unpeeled

  14. 1 1/20 ts Cinnamon

  15. 1.00 cn Crushed pineapple, drained

  16. 0 3/4 ts Nutmeg

  17. 1.00 c Finely chopped nuts

  18. 1.00 c Currants

  19. In large bowl of electric mixer, beat eggs. Add oil, sugar and vanilla. Continue to beat until thick and foamy. With a spoon, stir

  20. in zucchini and pineapple. In large bowl, combine flour, baking soda,

  21. salt, baking powder, cinnamon and nutmeg. Stir into zucchini mixture

  22. until blended. Add nuts and currants. Stir until blended. Divide

  23. 2 greased and floured

  24. 9 x 5 x 3 " loaf pans.

  25. 350 degrees F for 60 minutes or until loaves test done. Cool

  26. in pans for 10 minutes. Turn out on wire cake racks to cool

  27. completely.
