  1. 4 tablespoons 60ml Butter

  2. 2 tablespoons 30ml Onions - chopped (medium)

  3. 1/2 lb 227g / 8oz Mushrooms - sliced

  4. 1 1/2 cups 355ml Pearl barley

  5. 3 cups 711ml Chicken broth

  6. 1/4 teaspoon 1 1/3ml Salt

  7. 1/4 teaspoon 1 1/3ml Pepper Fresh parsley - chopped

  1. Recipe Instructions 1. Preheat oven to 350F.

  2. Melt butter in a large casserole. Saute onions 2 minutes over medium heat.

  3. Add mushrooms and saute 5-7 minutes more. Add barley. Cook until lightly browned.

  4. Add 2 cups of broth, salt and pepper, bring to a boil. Cover, reduce heat, and bake 45 minutes.

  5. Add remaining 1cup of broth. Return to oven and bake 30 minutes more.

  6. Garnish with chopped parsley.
