  1. 2 lbs 908g / 32oz Ground chicken

  2. 1 cup 146g / 5.1oz Atkins Bread Crumbs

  3. 3 Green onions - chopped

  4. 2 Garlic cloves - pressed

  5. 1 Egg - beaten

  6. 3 tablespoons 45ml Chopped fresh cilantro - divided

  7. 1 tablespoon 15ml Ground cumin

  8. 1 teaspoon 5ml Salt

  9. 1/2 teaspoon 2 1/2ml Chili powder

  10. 1 cup 237ml Green salsa

  11. 1 cup 237ml Avocado - peeled, pitted, (medium)

  12. 2 tablespoons 30ml Vegetable oil

  1. Combine chicken, bread crumbs, green onions, garlic, egg, 1 tablespoon of the cilantro, cumin, salt and chili powder in a bowl. Mix well and shape into four 1-inch-thick patties. Place on a plate, cover and refrigerate 1 hour.

  2. Meanwhile, mix salsa, avocado and remaining cilantro in a bowl and set aside.

  3. Heat oil in a large skillet over medium-low heat and cook burgers 7 minutes on each side, until browned and cooked through. Serve with salsa mixture.
