  1. 3 oz Cauliflower

  2. 1/4c Vinegar

  3. 2 1/2ts Sugar

  4. 1/4ts Salt

  5. 1/4c Water

  6. Pinch of shredded kelp

  7. 1/4pn Dried red pepper,

  8. Sliced in rings

  1. + A Zensai or Japanese style hors d'oeuvre.

  2. Cut cauliflower into small, bite-size pieces.

  3. Boil in water to cover for 3 minutes.

  4. In a small pan, add all remaining ingredients except kelp and red pepper.

  5. Add drained cauliflower and cook for 2 minutes.

  6. Cool.

  7. Add kelp and red pepper rings to cooled cauliflower and set for 3 hours or longer.

  8. Drain and serve cold.
