  1. 1/4 c. butter

  2. 1 (3 to 4 oz.) pkg. instant vanilla pudding

  3. 1 tsp. cinnamon

  4. 3 eggs, slightly beaten

  5. 3 c. milk

  6. 1 (8 1/4 oz.) can crushed pineapple, undrained

  7. 1/2 c. flaked coconut

  8. 8 slices white, French or raisin bread, cut into 1/2 cubes

  9. 1 tsp. white sugar and cinnamon, mixed

  1. Melt butter in a 2-quart measuring cup. Add pudding mix, cinnamon, eggs, milk, undrained pineapple and coconut. Blend thoroughly. Fold in bread crumbs. Pour mixture into a 2-quart microwaveable baking dish. Sprinkle with cinnamon and sugar mixture. Cook 30 to 32 minutes at power control #8. Serve warm.
