  1. 100 g carrots peeled

  2. 1 star anise

  3. 100 g Sugar

  4. 4 pig's cheeks sinew and skin removed

  5. 1 kg duck fat

  6. 250 g kipfler potatoes

  7. 10 ml truffle oil

  8. 50 g diced Tomatoes

  9. 10 g chives chopped

  10. 10 Glasses white wine vinegar

  11. 4 large Scallops

  12. Lemon

  13. 50 g Butter

  1. Carrot puree

  2. Cook carrots whole in water with sugar and star anise

  3. When cooked drain of liquid and discard star anise

  4. Puree carrot
