  7. 1 Cucumber

  8. 2 Eggs, hard-boiled

  9. 3 Onions, green

  10. 1 t Sugar

  11. 2 ts Dijon mustard

  12. 1/2 c Sour cream

  13. 4 c Apple cider

  14. This chilled meat and vegetable soup is a popular

  15. Russian dish. It's served with ice cubes in it. Since

  16. there's no substitute for Russian Kvass, a fermented

  17. and slightly alcoholic liquid made from grain, the

  18. ingredients in this recipe will have to do.

  19. 3 c beef stock and 1 c white wine

  20. for the apple cider.

  21. Dice meat. Peel and dice cucumber and eggs. Slice

  22. green onions. Combine first 4 ingredients. Mix

  23. together sugar, mustard, sour cream, and cider, and beat well. Add beef mixture and chill. Serve sprinkled

  24. with dill.

  25. Sylvia's notes: I used apple juice and leftover corned

  26. beef, and it was wonderful. Absolutely addictive.
