  1. 1 cup dried pasta (elbows, small shells, fiora, etc.)

  2. 1/2 cup egg beaters

  3. 1 cup fat free evaporated milk

  4. 1 cup small curd fat free cottage cheese-plain or with chives

  5. 1/4 cup shredded low fat cheddar cheese

  6. 2 tbsp parmesan cheese

  7. dash of salt

  8. 1 tsp pepper

  9. 1 tsp thyme

  10. 1 tsp paprika

  11. dash of nutmeg

  12. dash of cayenne pepper

  13. 2 tsp dried chives

  14. 1 tbsp Dijan mustard

  15. 1/4 cup bread crumbs

  16. 1 tbsp butter substitute

  1. Preheat oven to 350

  2. Cook pasta in boiling water, al dente, Drain and set aside

  3. In large bowl, mix well: eggbeaters thru mustard ingredients

  4. Spray a 2 quart casserole pan

  5. Add pasta and mix well

  6. Pour into prepared pan

  7. Top with bread crumbs and tab butter sub over top

  8. Bake uncovered 1 hour

  9. Let sit 5 minutes before serving hot
