  1. 2 lbs. flounder or white fish (or salmon)

  2. 2 Tbsp. lemon juice

  3. 1/2 cup parmesan cheese

  4. 1/4 cup butter , softened

  5. 3 Tbsp. mayonnaise

  6. 3 green onion s, chopped hot sauce to taste lemon and parsley, optional

  1. Place fillets on a greased broiler pan. Brush with lemon juice. Combine next 6 ingredients in small bowl and set aside. Broil fillets 4-6 minutes (longer if thicker) or until fish flakes with a fork. Remove from oven, spread with cheese mixture. Broil an additional 30 seconds or until cheese is lightly browned and bubbly. Garnish with lemon twists and parsley if desired.
