  1. Tortilla Soup

  2. Serves 8 16 ounces can tomatoes

  3. 1 medium onion, cut up

  4. 2 cloves garlic

  5. 4 tablespoons snipped cilantro

  6. 1/2 teaspoon sugar

  7. 8 cups chicken broth

  8. 1 1/2 pounds chicken breast cut up

  9. 3 chipotle peppers with a little adobo sauce

  10. shredded Monterey jack cheese

  11. avocados cut up

  12. Tortilla chips

  13. Sour cream

  14. In blender combine undrained tomatoes, onion, garlic, cilantro, and sugar. Cover and blend till nearly smooth. Put mixture into a

  15. large pot with chicken broth, chicken and chipotle peppers. Bring

  16. to boiling; cover and simmer for 20 minutes. Put crunched tortilla

  17. chips in a bowl with cheese, avocados, and sour cream (omit if

  18. desired). Ladle soup over; serve immediately.
