  6. 3 Cloves garlic, minced

  7. 2 Onions, chopped

  8. 1 Green sweet pepper, chopped

  9. 1 Stalk celery, chopped

  10. 1 ts Dried thyme

  11. 1/2 ts Dried oregano

  12. 1/2 ts Salt

  13. 1/4 ts Crushed red chili pepper

  14. 1 c Vegetable stock

  15. 2 c Cooked red kidney beans

  16. 1/4 lb Lean ham, cubed

  17. 2 c Hot cooked brown rice

  18. Fresh parsley or cilantro

  19. Heat oil over medium heat in a nonstick skillet. Cook

  20. garlic, onions, green pepper and celery, stirring

  21. often, for about 5 minutes or until onion is

  22. translucent.

  23. Stir in seasonings, pour in stock.

  24. With fork, crush about 1/3 of the beans. Add to

  25. skillet along with ham, stir well. Bring to a boil,

  26. reduce heat. Simmer, stirring occasionally, for about 20 minutes or until thickened. Spoon over rice.

  27. Garnish with parsley.
