  2. 1 1/4 pound ground beef

  3. 1 small onion, chopped

  4. 1/2 cup chopped green pepper

  5. 3 cans,

  6. 6 ounce size, tomato paste

  7. 1 1/4 cup water

  8. 1 cup salsa

  9. 2 cups fresh or frozen corn

  10. 1 1/2 cup chopped fresh tomatoes

  11. 3/4 cup chopped ripe olives

  12. 1 envelope taco seasoning

  13. 3 teaspoons garlic powder

  14. 1 1/2 teaspoon dried parsley flakes

  15. 1/2 teaspoon dried oregano

  16. 1/8 teaspoon salt

  17. 1/4 teaspoon pepper

  18. 32 corn or flour tortillas,

  19. 6 inch size

  20. 8 cups shredded mozzarella cheese

  1. In a skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink. Drain.

  2. In a bowl, combine tomato paste and water until blended. Add salsa.

  3. Stir into meat corn, tomatoes, olives and seasonings.

  4. Place tortillas on ungreased baking sheets.

  5. Spread each with 1/4 cup meat mixture to within 1/2 inch of edge and sprinkle with 1/4 cup of cheese.

  6. Bake at 375 F for 5 to 7 minutes or until melted.
