  1. 1 1/2 lbs carrots , thinly sliced

  2. 1/2 cup minced onion

  3. 6 ounces cheddar cheese , shredded

  4. 1 cup cracker crumb

  5. 1/2 cup margarine , melted

  6. salt & pepper

  1. Cook carrots in salted water until tender.

  2. Drain and set aside.

  3. Lightly grease 2-3 qt casserole.

  4. Combine onion, cheese, crumbs, salt and pepper.

  5. Place 1/2 of carrots then 1/2 of crumb mixture over that.

  6. Repeat layers.

  7. Pour melted margarine over all.

  8. Bake at 375 for 15 minutes until cheese melts.
