  7. 5-1/2 oz pkg,

  8. Pepperidge Farm Lemon Crunch

  9. -finely crushed

  10. 3 oz Butter; melted

  11. 4 Egg whites

  12. 1 c Sugar

  13. 4 Egg yolks

  14. 1/2 c Lemon juice, fresh

  15. 1 1/2 tb Lemon peel; finely grated

  16. 1 1/2 c Heavy cream; whipped

  17. 1 pk Raspberries, frozen,

  18. 10 oz;

  19. Thawed CRUST: Combine crushed cookies with melted butter. Pat into bottom of

  20. a 9 springform pan. Refrigerate.

  21. LEMON FILLING: Beat egg whites until foamy. Gradually add sugar and beat until stiff peaks form. Beat yolks in another bowl until thick

  22. and lemon-colored. Stir in lemon juice and peel. Gently fold in egg

  23. whites. Fold in whipped cream. Pour into crust and freeze. RASPBERRY

  24. SAUCE: Puree thawed frozen raspberries. Pour through a strainer into a serving bowl. Let torte stand at room temperature for 10 minutes. Remove springform.

  25. Slice and serve with raspberry sauce.
