  6. 36 lg Jalapeno chilies, roasted

  7. -and peeled

  8. 1/2 lb Cooked, peeled and deveined

  9. -shrimp, minced

  10. 2 t Mayonnaise

  11. 2 t Prepared chilli sauce

  12. 2 t Minced capers

  13. 2 t Minced green onions

  14. 2 t Minced fresh parsley

  15. 1/2 t Dijon mustard

  16. 1/2 t Horseradish

  17. 1/4 t Paprika

  18. -salt & fresh ground pepper

  19. -peanut oil

  20. 1 3/4 c All purpose flour

  21. 3/4 c Beer, room temp

  22. 2 Eggs, room temp

  23. 3 T Minced green onions

  24. 2 T Vegetable oil

  25. 1 1/2 T Catsup

  26. 2 t Worcestershire sauce

  27. 1 1/2 t Fresh lemon juice

  28. 1 1/2 t Baking powder

  29. 1 1/2 t Salt

  30. 1 t Cayenne pepper

  31. Using small, sharp knife; cut 1 1/2 inch slit at stem end on side of

  32. each chili. Scrape out seeds; do not tear stems. Rinse out chilies. Drain

  33. on towels. Mix next 9 ingredients. Season filling with salt and pepper.

  34. Spoon about 1 t into each chili (do not overstuff; chili should close).

  35. Arrange chilies on baking sheet. Refrigerate. Heat 3/4 inch peanut oil in

  36. heavy large skillet to 350 degrees. Blend in remaining ingredients in

  37. large bowl. Dredge each chili in mixture, coating completely. Add chilies

  38. to skillet (in batches; do not crowd) and fry until golden brown, turning

  39. once, about five minutes. Drain on paper towels and serve. From Bon
