  1. 1 large head green cabbage (about 2 1/2 lbs)shredded

  2. 1/2 cup toasted slivered almonds

  3. 1/4 cup toasted sesame seeds

  4. 1/2 cup thinly sliced scallions , green part only

  5. 2 packages(3 oz each) chicken flavored ramen noodle soup mix

  6. 1 package ramen noodle chicken flavor seasoning packet

  7. 1/2 cup canola or sunflower oil

  8. 1 tsp sesame oil

  9. 4 tablespoons seasoned brown rice vinegar

  10. 2 tablespoons honey

  11. 1 teaspoon salt

  12. fresh ground pepper to taste

  1. Combine the cabbage, almonds, sesame seeds and scallions in a large serving bowl.

  2. Crumble the ramen noodles into small pieces and add to cabbage mixture(Use a rolling pin to break up noodles in unopened package)

  3. In separate bowl, whisk together the oil, brown rice vinegar, honey, ramen seasoning, salt & pepper.

  4. Toss into the salad, stirring to coat well Refrigerate overnite so cabbage will have a chance to "pickle"

  5. For more protein add 1/2 cup shredded cooked chicken **
