  1. 1 can black eyed peas, drained (I use Sylvia's...she uses a seasoning that gives the dish a smoky flavor)

  2. 1 cup frozen baby kernel corn

  3. 1 can black beans (rinsed well in colander)

  4. 1 jar pimentos, chopped

  5. 1/2 jar chopped jalapeños (I don't add this)

  6. 1/2 cup chopped green, red, or yellow pepper

  7. 1 white onion, chopped

  8. 1 cup chopped celery

  1. Put all the above ingredients into a bowl. Prepare marinade: Combine 1 cup olive oil, 3/4 cup of sugar (or to taste), 1/2 cup apple cider vinegar, salt and pepper to taste in a small saucepan. Heat to dissolve sugar, add to bean/vegetable mixture, and stir to combine. Marinate overnight in refrigerator. Bring to cool room temperature, pour off marinade, and serve with Tostito Scoops. This is always a hit. I usually make a double batch, which serves a crowd.
