  8. 1 c Chicken stock

  9. 3 3/4 lb Mealy potatoes

  10. 1/2 oz Fresh parsley

  11. Small onion

  12. 1/2 c Salad dressing

  13. (The Zeughauskeller is a big, cheerful restaurant in Zuerich which

  14. specializes in sausages, as well as serving steak, chicken, fish, and very

  15. good beer and Swiss wine, in an atmosphere of relaxed history

  19. The following recipe is for their potato salad.

  20. They go through twenty metric tons of it per year.)

  21. (This recipe is an early approximation of the original recipe. All

  22. amounts have been converted from the original metric, and reduced.) .

  23. Salad dressing: About 1/2 C of a good mayonnaise, the fresher the

  24. better -- I think the Zeughauskeller makes their own fresh, every day --

  25. mixed to taste with German-style mustard (i.e. a sharp yellow mustard

  26. rather than a brown one).

  27. Every utensil must be scrupulously clean, then scalded, including pans.

  28. - Peel and cut up potatoes. Cook until "almost ready", then drain

  29. (trying to retain starch). Put in pan. -- Pour BOILING stock over

  30. potatoes to bring out the starch and bind the potatoes together. Let sit

  31. 45 minutes to absorb. -- Chop parsley and onions (to taste) by hand. Add

  32. to potatoes, toss; let sit in hot mixture to add flavor. -- Pour salad
