  7. 1 lb Medium Egg Noodles

  8. - uncooked 14 1/2 oz Low-sodium chicken broth

  9. 1 c Skim milk

  10. 1 t Salt

  11. 1/4 c Cornstarch

  12. 2 c Chopped cooked turkey

  13. 14 oz Canned artichoke hearts

  14. -- drained and quartered 7 1/2 oz Jar roasted red peppers

  15. -- drained and sliced 9 Kalamata olives

  16. -- pitted and sliced

  17. 1/2 c Grated mozzarella cheese

  18. -- (part-skim)

  19. 1/2 c White wine

  20. 1 t Fresh lemon juice

  21. 1/2 ts Black pepper

  22. Vegetable oil cooking spray

  23. 2 tb Grated Parmesan cheese

  24. Prepare noodles according to package directions;

  25. drain. Stir the broth, milk, salt and cornstarch

  26. together in a large pot or Dutch oven until the

  27. cornstarch is dissolved. Cook over medium heat,

  28. stirring constantly, until thickened and bubbly. Stir

  29. in noodles, turkey, artichoke hearts, red peppers,

  30. olives, mozzarella cheese, wine, lemon juice and pepper.

  31. 350 degrees F. Spray a 3-quart baking

  32. dish with cooking spray. Spoon noodle mixture into dish. Sprinkle with Parmesan cheese. Bake until

  33. bubbling around the edges, about 35 minutes. Let stand 5 minutes before serving.
