  1. Discard the rind from the bacon. Now fry the bacon rashers until they are lightly brown and crisp. Chop into small pieces. Beat the mashed potatoes with the butter and parsley until smooth. Add the chopped bacon, the sifted flour and salt to the mashed potato. Work to form a firm dough. Roll out the dough on a floured board to ½ inch thickness and then cut into squares.
