  1. 1 large red onion, sliced 1/2-inch thick and grilled

  2. 2 tablespoons olive oil Salt Freshly ground black pepper

  3. 1/4 cup red wine

  4. 1/4 cup balsamic vinegar

  5. 3 cups white beans, cooked

  6. 2 tablespoons sliced green onions

  7. 1 tablespoon parsley

  1. To a hot, dry saute pan, add onions and char for 2 minutes. Add olive oil and season with salt and pepper. Continue to saute for 3 minutes. Deglaze the pan with red wine and balsamic vinegar. Add the white beans and saute for 5 minutes. Check for seasoning. Finish with green onions and parsley and mix well. Yield : 4 servings
