  2. 3 tbls. flour

  3. 2 cups milk

  4. 1 pkg. shredded mexican cheese , divided (8oz.)

  5. 1 jar diced pimento (2 oz.)

  6. 1 can chopped green chiles, drained (4 1/2 oz.)

  7. 2 tbls. pickled jalapenos , finely chopped

  8. 1/2 tsp. salt

  9. 2 lbs. baking potatoes , peeled and sliced to

  10. 1/4 inch rings

  1. Preheat oven to 350 Melt butter over low heat in med. saucepan Whisk in flour until smooth Cook, whisking constantly, for one minute Gradually add milk and cook over medium heat, whisking constantly until thickened Stir in 1 1/2 cups cheese Remove from heat and stir until cheese melts Add pimento, chiles, jalapeno and salt, and mix well Put half of potato slices in lightly greased 2 qt. baking dish Top with half of cheese mixture Repeat layers Cover and bake 20 minutes Uncover and bake 40 minutes Sprinkle remaining cheese over top last 5 minutes of baking
