  2. INDONESIAN-STYLE YOGURT RICE

  7. 1 c Arborio rice (240g)

  8. 1/2 ts Saffron threads

  9. 1 md Onion, minced

  10. 2 Garlic cloves, minced

  11. 3 tb Oil

  12. 1 Inch piece fresh ginger,

  13. -grated

  14. 1 c Milk (240ml)

  15. 1 c Plain yogurt, room

  16. -temperature (1/2 pt.)

  17. Salt & pepper

  18. It's only touted as "Indonesian-style" but what the

  19. hay...

  20. As is the case with most Southeast Asian and South

  21. African yellow rice dishes, the coloring agent called

  22. for here was turmeric, not saffron. Yogurt appears in

  23. many Indian saffron dishes, however, and I suspected

  24. saffron would work well here. It does. You can

  25. substitute California pearl rice successfully.

  26. 1/4 cup of milk and steep threads for 20 minutes.

  27. Saute onion and garlic in oil. Add ginger and rice

  28. and coat grains well. Add the rest of the

  29. ingredients, including the saffron. Season with salt

  30. and pepper and cover. Cook over low heat until rice

  31. is done. Serve immediately.
