  1. Margarita Marinade 10 oz diced tomatoes green chilies, drained

  2. 1/4 c orange juice

  3. 1/4 c tequila

  4. 1/4 c vegetable oil

  5. 2 tb fresh lime juice

  6. 1 tb honey

  7. 1 ts minced fresh garlic

  8. 1 ts grated lime peel

  9. 2 lb pork tenderloin, chicken breasts, beef tenderloin, or flank steak

  10. In large recloseable plastic food bag, combine all ingredients

  11. except meat. Mix well.

  12. Add meat, seal the bag and turn over several times to coat meat

  13. thoroughly. Place bag in refrigerator, turning bag occasionally

  14. 8 hours or overnight.

  15. Preheat broiler.

  16. Remove meat from marinade; reserve marinade. Place meat on broiler

  17. 7 to 8 inches from heat source until desired doneness.

  18. In small saucepan, bring marinade to a boil, boil one minute.

  19. Serve marinade with the meat.

  20. 2 lbs of meat should serve

  21. 6 - 8 people.
