  1. 1 egg white

  2. 1 tablespoon reduced-sodium soy sauce

  3. 1-1/2 teaspoons toasted sesame oil

  4. 1 teaspoon dry sherry

  5. 1 teaspoon cornstarch

  6. 1/2 teaspoon sugar

  7. 1/4 teaspoon kosher salt

  8. 1/4 cup canned water chestnuts (drained), finely minced

  9. 2 tablespoons finely minced scallions

  10. 1 teaspoon finely minced fresh ginger (or more, according to taste)

  11. 3/4 pound shrimp, peeled, deveined, and tails removed

  12. 24 round dumpling wrappers or wonton skins

  1. Whisk together the egg white, soy sauce, sesame oil, sherry, cornstarch, sugar, and salt in a medium-size bowl. Stir in the water chestnuts, scallions, and ginger.

  2. Coarsely chop half of the shrimp. Finely mince the remaining shrimp by hand, or pulse them briefly in a food processor. Stir the chopped and minced shrimp into the mixture.

  3. Follow the directions for stuffing the dumplings and cooking them . Makes two dozen.
