  2. Title: BASMATI RICE WITH NUTS AND DRIED FRUIT

  5. 1 1/2 c Uncooked basmati rice or Other long grain rice

  6. 2 tb COOKING OIL

  7. 1 sm Onion, thinly sliced

  8. 1 tb Minced ginger

  9. 2 ts Minced garlic

  10. 2 Jalapeno or serrano chiles,

  11. Minced 1/2 ts Garam masala

  12. 1/2 ts Salt

  13. pn White pepper

  14. 3 c Chicken broth, or vegetable

  15. Broth, or water

  16. 1/4 c Diced dried apricots

  17. 1/4 c Coarsely chopped toasted

  18. Walnuts

  19. 1/4 c Toasted cashew halves

  20. 1/4 c Chopped pitted prunes

  21. 2 tb Chopped green onion

  22. 2 tb Toasted coconut

  23. 1/4 c Plum sauce

  24. Soak the rice in water to cover for 30 minutes; drain.

  25. Heat a 3 quart pan over medium high heat until hot Add the oil and the

  26. onion. Cook, stirring until the onion is lightly browned, about 1 minute.

  27. Add the ginger, garlic, chiles, garam masala, salt, and pepper and cook for 10 seconds. Add the rice and cook, stirring, until the mixture is well

  28. coated with the oil, about 1 minute.

  29. Add the broth and bring to a boil. Cook, uncovered, over medium high heat

  30. until the liquid drops to the level of the rice. Reduce the heat, cover

  31. and simmer on low until the rice is tender, about 15 mins.

  32. Remove the rice to a serving platter. Sprinkle the apricots, nuts, prunes,

  33. green onion and coconut over the rice. Serve with the plum sauce on the

  34. side.

  35. Personal Note: Can substitute raisins for prunes.
