  1. Ingredients :

  2. 1kg Butternut squash

  3. 2 Medium potatoes

  4. 3 Medium carrots

  5. 1 Onion

  6. 1 Chili

  7. 5 Basil fresh leaves

  8. 4 Table spoons olive oil

  9. 1/2 tsp Turmeric

  10. Salt and pepper

  1. Peel and chop allvegetables (except basil leaves) and add 500 ml of boiling water to large pot. Remove butternut seeds.

  2. Add Spices, half amount of olive oil and boil for5 minutes.

  3. Blend for 2 minutes or until smooth. Seasonwith salt and pepper.

  4. Serve hot with basil pesto topping.

  5. To make basil pesto— blend basil leaves with 2table spoons of olive oil.

  6. Butternut squash contains antioxidants, an excellentsource of beta-carotene and Vitamin A and C.

  7. Carrots contain beta-carotenes. Whilst the bodyconverts beta-carotene into Vitamin A, this vitamin is essential forvision, growth and boosting your immunity.
