  3. 2 Tomatoes - cut in wedges (small)

  4. 1/2 Red onion - thinly sliced (small)

  5. 2 teaspoons 10ml Dijon mustard

  6. 1 tablespoon 15ml Lemon juice

  7. 2 tablespoons 30ml Balsamic vinegar

  8. 1/3 cup 78ml Olive oil

  9. 1/4 cup 59ml Vegetable oil Salt - to taste Freshly-ground black pepper - to taste

  1. Recipe Instructions Tear the lettuce into bite-sized pieces and place the lettuce in a large bowl. Slice the cucumber into thin rounds and add the rounds to the lettuce, along with the tomatoes and onion. Set aside. Whisk together the mustard, lemon juice and vinegar in a small bowl. Slowly whisk in the olive and vegetable oils until the vinaigrette is emulsified. Season with salt and pepper. Just before serving, toss the salad with the vinaigrette. This recipe yields 4 servings.
