  1. 1 ea Precooked pastry Shell

  2. 1 c Brown Sugar

  3. 1/3c Cornstarch

  4. 1/4ts Salt

  5. 1 c Boiling Water

  6. 1 1/2c Milk (heated)

  7. 2 ea Eggs (separated)

  8. 1/2ts Vanilla

  9. 4 tb Icing Sugar

  1. + Directions : Pre-cook a pie crust until it is a light tan in colour (400F for 12-15 minutes). In a pot, combine the borwn sugar, cornstarch & salt. Add one cup boiling water, cook at low heat, stirring constantly until all the mixture thickens. Add beaten egg yolks & milk. Stir until thick. Remove pot from heat. Add vanilla. Pour into pie crust. Top with meringue, made with egg whites & icing sugar. Bake for 10-12 minutes at 400F.
