  1. 4 eggs

  2. 2 cups bean sprouts, cut into bite size pieces

  3. 1 green onion, chopped

  4. 2 Tbls flour

  5. 1/4 cup vegetable oil, seperated Gravy:

  6. 2Tbls vegetable oil

  7. 2Tbls flour

  8. 1 cup chicken broth

  9. 1Tbls oyster sauce, can be bought in the Asian isle of your supermarket

  10. 1 tsp dry sherry

  11. 1/4 tsp salt

  12. 1/4 tsp white pepper

  1. Combine eggs, sprouts, onion and flour. Heat a large skillet over medium heat until hot. Add 2 Tbls oil and heat again. Ladle mixture into 4 mounds in skillet, flatten. Cook until they are brown underneath, turn over and add the next 2 Tbls oil and cook for 6-7 minutes. Remove and drain on a paper towel covered plate, keep warm. For gravy, In a small pot mix oil and flour on low heat until it forms a roux. Slowly stir in broth, oyster sauce, sherry, salt and pepper. Cook slowly until you reach desired gravy thickness, about 3 minutes. Transfer egg patty to plate and pour gravy on top, serve. If you want you can add shrimp, chicken or pork as a new variation.
