  1. 10 -12 medium potatoes

  2. 3 -4 lemons

  3. 1 -2 garlic clove

  4. olive oil

  5. oregano

  6. salt & pepper, to taste

  1. Pre-heat the oven to 375°F.

  2. Wash and cut the potatoes into quarters lengthwise 3 Place into a large, deep ovenproof baking dish 4 Drizzle with olive oil.

  3. Squeeze the lemons and remove the zest from 1 or 2, crush the garlic and chop the oregano.

  4. Season the potatoes well and scatter with the oregano and lemon zest 7 Bake uncovered for about 30-40 minutes or until tender.

  5. Can also be placed under a very hot broiler for a few minutes to brown.

  6. Serve with a squeeze of lemon juice.
