  4. Hazelnut crust

  5. 1 cp roasted hazelnuts (350 for 10 mn.)

  6. 3 egg whites

  7. 2 cps powdered sugar

  8. 1/2 cp sugar

  9. 1/8 tsp salt

  10. ameretto cream cheese filling

  11. 1/2 cp ameretto

  12. 3 tsp unflavored geletin

  13. 2 tsp vanilla

  14. 1 1/2 lbs cream cheese

  15. 3/4 cp sugar

  16. 2 tbs lemon juice

  17. 1 tsp lemon zest

  18. 2 cps cream

  19. hazelnut macaroon:

  20. heat oven to 350

  21. grease 10 inch springform pan

  22. line with parchment (DO NOT USE WAX PAPER AS IT STICKS HORRIBLY !)

  23. grease parchment

  24. line a cookie sheet with greased parchment

  25. whisk together eggs and vanilla

  26. remove as much skin from the hazelnuts as is convenient

  27. chop the nuts in a food processor with one cup of the powdered sugar for 30 sec.

  28. add both powdered and regular sugar pulse a few times to combine

  29. with processer running, pour in egg mixture

  30. process for 15 sec until smooth

  31. reserve 1/2 - 1/3 cup batter

  32. pour remaining into springform, smooth with spatula

  33. pour reserved batter onto cookie sheet, spread in a 7-8 inch disk

  34. 25-30 min., disk

  35. 20-25 min.

  36. cool on wire rack

  37. 1/8 inch pieces and soak in

  38. 1/4 amaretto

  39. (DO NOT SOAK FOR MORE THAN 15 MIN OR THEY GET SOGGY !)

  40. carefully remove crust (VERY CAREFULLY)

  41. replace bottom of springform with foil wrapped cardboard circle

  42. replace crust

  43. amaretto cheesecake filling:

  44. 1/4 cp amaretto, let stand 5 min.

  45. heat in sauce pan with hot (not boiling) water stirring for 4 min.

  46. leave in hot water to stay warm

  47. beat cream cheese in mixer for 1 min.

  48. add lemon juice and zest, mix

  49. beat cream to soft peaks fold 1/3 cream into cream cheese

  50. fold in remaining whipped cream

  51. fold in soaked macaroon disk bits

  52. scrape into prepared pan, cover with plastic wrap

  53. refridgerate at least 3 hrs. (preferably overnight)

  54. decorate as you see fit
