  1. Green Chili Sauce:

  2. 1 cup Coarsely Chopped Cilantro

  3. 1 cup Chopped Mexican Parsley

  4. 2 Tbsp Chopped Fresh Oregano Leaves

  5. 1 Tbsp Honey

  6. 1 tsp Lime Zest

  7. 1 tsp Hot Sauce

  8. 1 tsp Red Pepper Flakes

  9. 2 Medium Poblano Chiles; Drained , seeded and chopped

  10. 1 Medium Sweet Onion , chopped

  11. 1 Garlic Clove , chopped

  12. 1/4 tsp Freshly Ground Black Pepper

  13. 1/2 tsp Kosher Salt

  14. 1/4 cup Extra Virgin Olive Oil

  15. Slaw:

  16. 2 Tbsp Honey

  17. 1/2 cup Vegetable Oil

  18. 1/4 cup Freshly Squeezed Lime Juice

  19. 2 Tbsp Rice Vinegar

  20. 2 Tbsp Ancho Chili Powder

  21. 1 tsp Freshly Ground Pepper

  22. 3 cups Napa Cabbage , finely shredded

  23. 1 cup Savory Cabbage , finely shredded

  24. 1/4 cup Finely Chopped Cilantro Leaves

  25. Burgers:

  26. 2 1/2 lb Ground Chuck , 80%-85% lean

  27. 1 tsp Kosher Salt

  28. 1 tsp Freshly Ground Black Pepper

  29. 6 slices Mozzarella Cheese

  30. 6 Hamburger Buns , split and toasted

  1. Preheat grill to medium high heat.

  2. Green Chili Sauce:

  3. Place cilantro, parsley and oregano leaves in a blender or food processor, then pulse 2-3 times to blend. Add all remaining ingredients except olive oil, pulse 2-3 times to blend, then add olive oil, pulse 2-3 times until blended, and transfer to a small bowl and set aside.

  4. Slaw:

  5. In a large mixing bowl, whisk together honey, olive oil, lime juice, vinegar, chili powder, salt and pepper until well blended. Add both cabbages and cilantro, toss until well coated, and set aside until needed.

  6. Burgers:

  7. Shape ground beef into 6 round firm patties and season each burger on both sides with 1/4 teaspoon salt and 1/4 teaspoon pepper. Grill burgers 10-15 minutes or to desired doneness, turning once. When burgers are almost done, place cheese on burgers and set buns, flat side down on grill until golden brown. Remove burgers from grill and let rest 5 minutes. Assemble burgers as follows: divide green chili sauce among 6 bottom buns, add burger and some slaw, then close with burger top and serve.
