  2. HONEY CRUNCH PECAN PIE

  6. --CRISCO CRUST--

  7. 1 1/3 c All-purpose flour

  8. 1/2 c Butter flavor Crisco shorten

  9. 4 T Cold water

  10. --PECAN FILLING--

  11. 4 Eggs,slightly beaten

  12. 1/4 c Brown sugar,packed

  13. 1/4 c Granulated sugar

  14. 1 c White corn syrup

  15. 1/2 t Salt

  16. 1 t Vanilla extract

  17. 1 T Bourbon

  18. 2 T Butter,melted

  19. 1 c Chopped pecan nuts

  20. --CRUNCH TOPPING--

  21. 1/3 c Brown sugar,packed

  22. 3 T Butter

  23. 3 T Honey

  24. 1 1/2 c Pecan halves

  25. Preheat oven to 350 degrees.For crust:Combine flour and salt in

  26. mixing bowl.Cut in shortening with pastry blender or 2 knives until

  27. mixture is uniform.Sprinkle in water,1 tbsp. at a time, until dough

  28. forms a ball.

  29. On lightly floured surface,roll crust into circle 1/8 thick and 1 1/2 larger than inverted

  30. 9 pie plate.Gently,ease dough into pie plate,being careful not to stretch the dough.Fold pastry edge

  31. under to make double thickness around rim.Flute as desired.

  32. For Filling:Combine all ingredients except pecans.Mix well.Fold in

  33. chopped pecans;spoon filling into unbaked pastry shell.Bake

  34. 350

  35. 50 to 55 minutes.During last

  36. 30 minutes of baking,cover edge

  37. of pastry shell with aluminum foil to prevent over browning.

  38. For Topping:Combine sugar,butter and honey in medium saucepan. Cook

  39. 2 to 3 minutes. Stir

  40. constantly.Add pecan halves.Stir until pecans are well coated. During

  41. last 10 minutes of baking,remove pie from oven;spread crunch topping

  42. 10 to 12 minutes or until topping is bubbly and golden brown. - - - - - - - - - - - - - - - - - -
