  1. 1 medium onion, diced

  2. 3 cloves garlic, sliced

  3. 2 fresh jalapeos, diced

  4. 2 cups Clamato Tomato Cocktail

  5. 1 cup beer

  6. 1 cup coconut milk

  7. 3 lbs mussels, fresh, cleaned, bread removed

  8. 1 cup tomatoes, diced

  9. 2 bunches basil, chopped

  1. Directions In a large saut pan, over medium-high heat; heat olive oil, add onions, garlic and jalapeos; saut 8-10 minutes. Add Clamato, beer and coconut milk, bring to boil and cook for 10-12 minutes reducing liquid by about 1/3; stir occasionally. Add mussels, tomatoes and basil, cover and allow mussels to cook until they are open about 5 minutes, stirring once or twice. Remove from heat and discard any mussels that do not open. Serve in large bowl with plenty of broth.
