  1. 1/2 lb. bacon

  2. 1/2 cup diced red onion

  3. 1/2 cup sliced mushrooms

  4. 16 oz. baby spinach

  5. 2 hard-boiled eggs, chopped

  6. 1/2 cup canola oil

  7. 1/2 cup granulated sugar

  8. 1/3 cup apple cider vinegar

  9. 1 Tbsp. Dijon mustard

  10. kosher salt and pepper to taste

  1. Cook bacon in a large skillet until crisp. Remove bacon from the skillet, leaving skillet on the heat. Drain the bacon on paper towels, and set aside.

  2. Add onion and mushrooms to the bacon drippings. Saute over medium heat until the vegetables are softened, about 3 minutes.

  3. Toss spinach, hard boiled eggs , bacon, onion and mushrooms together in a large salad bowl.

  4. In a small bowl, whisk together remaining ingredients. Pour over salad just before serving. Toss well.
