  1. 1 Chicken carcass

  2. 2 Water

  3. 1 Carrot - coarsely chopped

  4. 1 Celery stalk

  5. 1 Onion - quartered (small)

  6. 1 Bay leaf

  7. 1/4 teaspoon 1 1/3ml Dried basil

  8. 6 Peppercorns

  9. 1/4 cup 36g / 1 1/3oz Fresh parsley - chopped

  1. Break up carcass. Add giblets, if available. Combine all ingredients in a large soup kettle. Bring to a boil and simmer over low heat for 1-1/2 to 2 hours. Strain.
