  1. 3/4 lb boneless skinless chicken thighs

  2. 1/4 teaspoon salt

  3. 1/8 teaspoon pepper

  4. 1/4 cup chopped onion

  5. 1 medium bell pepper, cut into strips

  6. 1 cup tomato pasta sauce (from 26 oz jar)

  7. 2 cups uncooked rotini pasta (from a 16 oz package)

  8. 1/2 cup shredded mozzarella cheese (2 oz)

  1. Sprinkle chicken with salt and pepper. In 3- to 3 1/2-quart slow cooker, place chicken. Top with onion and bell peppers. Add pasta sauce.

  2. Cover; cook on Low heat setting 4 to 5 hours.

  3. Cook and drain pasta as directed on package. Place pasta on platter. Top with chicken and sauce. Sprinkle with cheese.

  4. For another meal, use the leftover pasta sauce to top slices of French bread, then sprinkle with shredded mozzarella cheese. Broil to melt the cheese.
