  2. Title: Crawfish and Egg Salad

  4. 3 ea Eggs, hard boiled

  5. 1 x Salt, if needed

  6. 1 tb Durkee's famous sauce

  7. 2 tb Dill pickles, finely

  8. 1 lb Chopped crawfish or shrimp

  9. 1 ts Red cayenne pepper

  10. 2 tb Mayonnaise

  11. 1 ts Poupon mustard

  12. To cook crawfish:

  13. 2 quarts water to boil with

  14. 2 tsp salt and 1/2 tsp of red pepper. Add peeled crawfish tails to water.

  15. Bring to boil and remove from heat immediately. Drain and cool.

  16. Chop hard-boiled eggs. Chop crawfish and mix with eggs. Add

  17. pickles. Mix mustard, Durkee's, and mayonnaise and add to egg

  18. mixture. If needed, add more pepper and salt.
