  1. 900g freshly minced beef

  2. 8 slices white Cheddar, sliced

  3. 8 slices yellow Cheddar, sliced

  4. 1/2;-cm thick

  5. 8 hamburger buns

  6. 8 leaves cos Lettuce

  7. Griddled Vidalia onions, recipe follows

  8. 4 (1/2;-cm thick) slices large tomatoes (2)

  9. Horseradish mustard, recipe follows

  10. Gherkins, sliced

  11. Tomato ketchup

  12. 125ml (1/2; cup) Dijon mustard

  13. 2 tbsps prepared horseradish, drained

  14. 2 Vidalia onions, sliced crosswise,

  15. 1/2;-cm thick slices

  16. 2 tbsp olive oil

  17. Salt and freshly ground black pepper

  1. Hamburger with double cheddar cheese, griddled Vidalia onion and horseradish mustard 1) Preheat griddle or a cast iron skillet to high.

  2. Divide the beef into 8 (115g) burgers. Season on both sides with salt and pepper, to taste. Griddle or cook in the skillet for 3 to 4 minutes on each side for medium-rare doneness. During last minutes of cooking add 2 slices of cheese to each burger, cover griddle and let melt, approximately 1 minute. Place burger on bun and top with horseradish mustard, lettuce, grilled vidalia onions, gherkins and tomato ketchup.

  3. For the horseradish mustard:

  4. 1) Whisk mustard and horseradish together in a small bowl.

  5. For the grilled vidalia onions:

  6. 1) Brush olive oil on both sides of the onions and season with salt and pepper. Griddle the onion slices for 3 to 4 minutes on each side until golden brown.
