  1. 2 1/2 cups Creole White Beans

  2. 4 large pork loin chops, trimmed (about 8 ounces each and 2 inches thick)

  3. 4 teaspoons Emeril's Creole Seasoning

  4. 1 tablespoon olive oil

  1. Prepare the Creole White Beans, and cover to keep warm.

  2. Sprinkle the chops with the Creole Seasoning, using 1/2 teaspoon per side, and with your hands coat the meat.

  3. Heat the oil in a large skillet over high heat. Add the chops and sautÈ them for 7 minutes on each side; stand them on their fat edge and cook for another 4 minutes. The pork will be very dark on the outside, pink and juicy on the inside.

  4. To serve, spread a heaping 1/2 cup of the Creole White Beans on each of 4 plates and top with a pork chop.

  5. Yield : 4 main-course servings
