  7. 1/4 c Honey

  8. 1/2 c Soy margarine

  9. 1/2 c Light molasses

  10. 2 c Unbleached white flour

  11. 1/4 c Ground almonds

  12. 1/2 ts Grated orange peel

  13. 1 t Ground cinnamon

  14. 1/2 ts Ground ginger

  15. 1/2 ts Ground nutmeg

  16. 1/4 ts Ground cardamom

  17. 1/2 ts Baking soda

  18. Vegetable cooking spray

  19. In a small pot over medium heat, combine honey,

  20. margarine, molasses & bring to a boil. Remove from

  21. heat & let cool for 3 minutes. While mixture is

  22. cooling, combine remaining ingredients in a large

  23. bowl. Stir in honey mixture until well combined.

  24. Divide dough into 4 equal pieces & roll each piece

  25. into a log. Wrap each log in plastic wrap &

  26. refrigerate 2 or 3 hours or overnight. Preheat oven to

  27. 375F. Lightlky coat a non-stick baking sheet

  29. cooking spray & set aside. Lightly flour work surface.

  30. Roll each log into a thin dough about 1/8 thick. Cut into shapes with cookie cutters. Transfer to baking

  31. sheet & bake for 5 minutes or until firm. Cool on
