  1. 2 cups 474ml Lentils - rinsed

  2. 4 cups 948ml Water

  3. 1/2 cup 99g / 3 1/2oz Butter - (less if desired)

  4. 2 Carrots - grated

  5. 2 Onions - finely chopped

  6. 2 Garlic - finely chopped

  7. 6 tablespoons 90ml Flour

  8. 2 cups 474ml Applesauce

  9. 1 tablespoon 15ml Curry powder

  10. 2 cups 474ml Water

  11. 1/4 cup 59ml Lemon juice

  12. 2 cups 320g / 11oz Cooked rice

  1. Recipe Instructions Cook the lentils in the water for 30 minutes; drain. Melt butter and add the carrot, onion, and garlic and saute for a minute. Add the flour, applesauce, curry powder and 2 cups water. Simmer for 30 minutes. Add the lemon juice, lentils, and rice. Heat the dish thoroughly and serve.
