  1. 4 medium unpeeled potato es-cubed

  2. 1/2 c chopped onion

  3. 1/2 tsp salt

  4. 4 T margarine or butter

  5. 4 tsp chopped fresh parsley

  1. Heat Grill. Cut 4 18x12" pieces of heavy duty aluminum foil. Place ¼ of potatoes and onion on each piece of foil. Sprinkle with ¼ parsley, salt and pepper. Top each with 1 Tbsp margarine. Wrap each packet securely using double fold seals. Allow room for expansion. When ready to barbecue place foil packets on gas grill over medium heat or on charcoal grill 4-6 inches from medium coals. Cook 45-55 minutes or until potatoes are tender, rearranging packets several times during cooking. OR Heat oven to 350°F and bakd for 45-55 minutes ot until potatoes are tender.
