  2. 2 tablespoons lime juice

  3. 1/4 teaspoon salt

  4. 2 cups cooked chicken -- cubed or shredded

  5. 1 cup cooked green peas

  6. 1 cup mayonnaise or salad dressing

  7. 1/4 cup carrot -- finely chopped

  8. 1/4 cup celery -- finely chopped

  9. 1/4 cup fresh cilantro -- finely snipped

  10. 3 tablespoons orange juice

  11. 1/2 teaspoon salt

  12. 1/2 teaspoon ground cinnamon

  13. 1/4 teaspoon freshly ground pepper Lettuce leaves

  14. 3 oranges -- peeled and sectioned or unpeeled and cut into wedges

  15. 2 avocados -- cut into wedges

  1. Preparation : 1. Sprinkle scallions with lime juice and 1/4 teaspoon salt; cover and refrigerate.

  2. Mix remaining ingredients except lettuce, oranges and avocados; cover and refrigerate at least 1 hour.

  3. Spoon chicken mixture onto lettuce. Garnish with oranges and avocados; sprinkle with scallions.
