  1. 4 Swordfish fillets - - (6 oz ea)

  2. 3 tablespoons 45ml Yucatan marinade - seenote

  3. 2 tablespoons 30ml Spicy mango salsa - seenote

  1. * Note: See the "Yucatan Marinade" and "Spicy Mango Salsa" recipes which are included in this collection.

  2. About 1 hour before grilling, brush the fish steaks on both sides with the Yucatan Marinade, cover, and refrigerate.

  3. Prepare a wood or charcoal fire and let it burn down to embers.

  4. Grill the steaks for 3 minutes on each side, until medium.

  5. Serve topped with 2 tablespoons Spicy Mango Salsa.
