  6. 5 Egg Yolks

  7. 3/4 C Sugar

  8. 1 Env Gelatin

  9. 1/4 C Water

  10. 1/2 C Cognac -- divided

  11. 1 C Heavy Cream

  12. 1 10 Graham Cracker Crust -- baked and cooled

  13. 2 Tbsp Shaved Chocolate For Garnish -- <OR>

  14. Whipped Cream For Garnish

  15. Beat egg youlks until thick and lemon colored. Gradually beat in sugar.

  16. Soften the gelatin in the water and add 1/4 cup cognac. Heat over boiling

  17. water until gelatin dissolves. Pour the gelatin mixture into the yolks,

  18. stirring briskly. Stir in remaining 1/4 c cognac. Chill until this

  19. mixture will mound slightly, and the fold in the whipped cream. Pour the

  20. filling tnto the shell and chill. Before serving, garnish with shaved

  21. chocolate or whipping cream.
