  2. Barbecued Chicken Sandwich

  7. 2 whole chickens ( 3 1/2 pounds each)

  8. Barbecue sauce

  10. 1 tablespoon paprka, Hungarian

  11. 1/2 teaspoon celery salt

  12. 1/2 teaspoon sugar

  13. 1/2 teaspoon sage

  14. 1/2 teaspoon mustard

  15. 1/2 teaspoon chipotle powder

  16. ** Barbecue Sauce **

  17. 1 tablespoon peanut oil

  18. 2 tablespoons onion -- minced

  19. 1 1/2 cups cider vinegar

  20. 1 cup ketchup

  21. 3 tablespoons dry rub

  22. 2 tablespoons brown sugar

  23. 1 cup coffee

  24. 1 tablespoon mustard

  25. 2 cloves garlic -- minced

  26. Mix all ingredients well and reserve in refrigerator, covered tightly. Will

  27. keep for up to 2 weeks. Barbecue Sauce:

  28. In a saucepan, heat peanut oil. Add garlic and onion. Cook until soft. Add

  29. 1, making sure to get under

  30. the skin as much as possible. Massage the bird well and refrigerate

  31. overnight. Prepare the grill with soaked wood chips. Split the chicken in

  32. half and cook on the grill over slow heat for 45 minutes or until cooked.

  33. Allow the chicken to cool slightly. Pick the meat off the bone, remove the

  34. skin. Chop the chicken lightly and mix with 1 cup of the barbecue sauce.
