  1. 8 pickling onions, peeled, leaving roots and tops intact, halved

  2. 1/4 cup (40g) raisins

  3. 3/4 cup (180ml) aged red wine vinegar

  4. 2 tbs light brown sugar

  5. 1 Treviso radicchio, cut into 2cm-thick slices Extra virgin olive oil, to serve

  1. Method One day ahead: Place onions, raisins, vinegar and sugar in a stainless steel saucepan and bring to the boil over medium heat. Reduce heat to low-medium and cook, turning onions occasionally, for 20 minutes or until onions are tender and vinegar has reduced. Cool and refrigerate. On the day: Reheat onions gently over low heat until warmed, then layer on a platter with radicchio. Drizzle with cooking liquid and oil. Season to taste. Serve.
