  1. 2 cups smoked fish

  2. 3 tablespoons butter or margarine

  3. 3 tablespoons flour

  4. 1 teaspoon salt few grains cayenne pepper

  5. 1 1/2 cups milk

  6. 2 cups cooked rice

  7. 2 hard cooked eggs -- sliced

  8. 1/4 dried green pepper

  9. 1 tablespoon butter or margarine

  10. 1 tomato -- chopped

  1. Preparation : Flake fish. Make a white sauce using 3 Tbsp butter, 3 Tbsp flour,, salt, pepper and milk. Place rice, fish, eggs, green pepper and tomato in layers in a 1-1/2 quart casserole. Begin and end with a layer of rice and pour white sauce over all. Dot with 1 Tbsp butter. Bake in a moderate oven (350 degrees F.) for 20 to 30 minutes or until piping hot.
